Little Introduction To Sauvignon
Blanc Grapes |

This
white grape's history starts over
1500 years ago in the Loire [LWAHR]
River region; especially near
Orleans in France. The unique
climate and well drained soils in
the area help this varietal to
excel. It is also found in
Bordeaux where it is often blended
with Semillon and barrel aged.
Sauvignon Blanc became popular
in California when Robert Mondavi
introduced a barrel aged version
of the varietal renaming it Fume
Blanc. This heavily oaked pioneer
has progressively given way to a
more flinty, grassy, and acidic
winemaking technique; similar to
the same style that put New
Zealand Sauvignon Blancs, and for
that matter New Zealand's wine
industry, on the map.

Blanc Fume, Fume Blanc, Sancerre

is CAP?) system this unique
style of Sauvignon Blanc is more
flinty and acidic, similar to the
Sauvignon Blancs coming out of New
Zealand. With approval from our
resident Kiwi, Bill Fletcher, this
wine's distinctive flavor profile
makes it a pioneer in exploring
the natural flavors of the
Sauvignon Musque clone grapes.
This Sauvignon Blanc has crisp
acidity and a bold nose of
gooseberry, grapefruit, passion
fruit and mango. Light/medium in
body, this wine has seen neither
oak nor oxygen. It offers
fruit-forward flavors of tropical
fruits, grapefruit and lime.
Sophisticated and elegant, it is
well balanced to enjoy over the
next 4 years. Fruit lingers on the
refreshing finish.

Grapes have a long history |

The
workhorse of the white wines
produced today. With its long
history in Burgundy, France, this
noble grape has traveled the globe
well, most likely due to the fact
that it does well in several
different types of soil, and the
flavor profile range is quite
extensive. Despite being used for
still wine production, it is also
one of the main varietials used in
Champagne and Sparkling wine
throughout the world.
Chardonnay style is heavily
influenced by both the cooperage
choice as well as the level and
timing (in tank or in barrel) of
malo-lactic fermentation (buttery
flavor). Wine styles are broad;
with the Californian style leaning
towards Chardonnays with lots of
oak influence and full malo-lactic
secondary fermentations.
