Coconut Quinoa Breakfast Bowl

Goodness in a bowl! Wake up with a hearty breakfast that is loaded with wholesome ingredients, like organic quinoa, coconut milk, and fresh berries.

I've discovered this recipe a few years ago, while learning all about clean eating.

I usually make a big batch once a week, which is not only super healthy, but also makes makes for a quick breakfast on busy mornings.

This healthy, easy breakfast starts simple and can be served as-is or dressed up into a quinoa breakfast bowl by adding fresh fruits, shredded coconut, and raw nuts. All you need are five basic ingredients:

Ingredients: (4 servings)

  • 3 tsp. Extra-Virgin Coconut Oil

  • 4 tsp. Ground Cinnamon

  • 1 cup Organic Quinoa, rinsed (use any color you like)

  • 2 (400ml) cans Light Coconut Milk (organic if available)

  • 4 tbsp. Pure Maple Syrup

Topping Options:

  • Fresh Organic Berries or Any Fruits You Like

  • Organic Shredded Coconut

  • Raw Almonds (sliced) or Any Other Nuts


  1. In a medium saucepan, heat coconut oil on medium heat.

  2. Add cinnamon, stirring constantly, until fragrant. About one minute.

  3. Add quinoa and stir until evenly coated.

  4. Add coconut milk and cover, bring to a boil. Then, remove lid and reduce to a simmer until milk has been absorbed, about 15 minutes.

  5. Add maple syrup and stir to combine.

  6. Top with fresh berries, shredded coconut, and almonds.
