Many of you asked if I could share the recipe for coconut quinoa with kale and mushrooms, so here it is. It is a healthy, quick, and easy recipe following the clean eating guidelines. It is also a one-pot meal which makes it even better. I'm all for making it easy for the cook. Although, truth to be told, when I do the cooking, my family needs to do the clean up. And, trust me, they do appreciate when there is only one pot to clean.
You can enjoy this dish as your main meal when you're in the early days of your clean eating program or want to loose weight. But, it is also great as a healthy side dish with grilled chicken, pork, or fish.
Ingredients:
4 tbsp. coconut oil (divided in half)
4 garlic cloves, minced
8oz organic mushrooms, sliced
2 cups pre-cooked quinoa (you can make it ahead of time)
6 cups organic kale
1/2 tsp. cumin
Salt and pepper to taste
Directions:
Melt 2 tbsp. coconut oil and sauté garlic and mushrooms until soft.

Add pre-cooked quinoa and mix well to heat through.
Season with cumin, salt, and pepper.
