Family Favorite: Homemade Flatbread


Homemade food is simply the best. Wouldn't you agree? I recently made this flat bread and it was a big hit with my family, kids and adults alike. Everyone loved the thin crust! I'm trying hard to make healthy food and for the main part, ok, minus the pancetta ;-), this recipe fits the bill. In addition, I served it with a side of fresh arugula salad but you can use any salad you like.


It is very easy to prepare, perfect for a quick weeknight dinner, and all ingredients are available at your local Trader Joe's for one stop shopping. I'm not promoting Trader Joe's, but I do love shopping there. Try the flatbread and let me know what you think.


Ingredients:

  • Olive oil or spray

  • 1 (16 oz) bag of garlic + herb pizza dough

  • 1/3 - o1/2 jar (16oz) of pizza sauce

  • 1 (12oz) package of shredded lite mozzarella cheese

  • 1 cup organic baby spinach

  • 1/2 organic bell pepper (any color)

  • 4 oz organic crimini mushrooms (sliced)

  • 1/2 (2oz) package uncured pancetta

  • Organic basil and oregano - to taste

Directions:

  1. Gently remove dough from bag and let it sat at room temperature for about 30 minutes. Keep an eye on it to check when the dough is soft enough and ready to roll out

  2. Sprinkle olive oil on baking tray and brush out evenly Note: I use a 12"x17" baking tray and it's the perfect size to make a thin flatbread out of this dough.

  3. Carefully roll out the dough - using your hands or a rolling pin - in all directions until the dough covers the whole tray

  4. Spread pizza sauce, then mozzarella cheese

  5. Top with spinach, bell peppers, mushrooms, and pancetta

  6. Season to taste with basil and oregano

  7. Bake on 400F for about 20-24 minutes. Note: Whether you are using a pizza oven or a conventional oven, this flatbread takes longer than the bag says, but this will obviously depend on your specific oven and your preferences. Make sure to keep an eye on the pizza as it cooks, and be sure to rotate the tray if you find one side is cooking quicker than the other.
